Ingredients:

For the filling:

  • Cabbage, finely chopped

  • Carrots, grated

  • Onions, finely chopped

  • Spring onions, chopped (optional)

  • Green peas (optional)

  • Green chilies, finely chopped (optional for heat)

  • Ginger, finely chopped or grated

  • Soy sauce

  • Black pepper

  • Cumin powder

  • Salt to taste

  • Oil (for sautéing)

For the dough:

  • All-purpose flour (maida)

  • Salt

  • Water, as needed to make the dough

  • Oil (optional)

For pan-frying:

  • 2-3 tbsp oil

For dipping sauce (optional):

Instructions:

  1. Prepare the dough: In a mixing bowl, combine the flour and salt. Gradually add water to knead into a smooth, soft dough. Cover and set aside for 30 minutes.

  2. Prepare the filling: Heat oil in a pan, add ginger, onions, and green chilies (if using), and sauté for a couple of minutes. Add the rest of the vegetables and sauté until they are softened. Stir in soy sauce, cumin powder, black pepper, and salt. Remove from heat and let the filling cool.

  3. Shape the momos: Roll the dough into small balls and flatten them into circles. Place a spoonful of the vegetable filling in the center of each circle. Pinch the edges together to form a pleated dumpling shape.

  4. Pan-fry the momos: Heat oil in a flat pan over medium heat. Arrange the momos in the pan, ensuring they don’t touch each other. Cook until the bottoms are golden brown, then add a little water (about 2-3 tbsp) and cover the pan to steam the momos for 5-7 minutes, until the filling is cooked through.
