Schezwan Chicken Momo is a fusion dish that blends the traditional Tibetan or Nepali chicken-filled momos with a spicy, tangy Schezwan sauce. The momos are either steamed or pan-fried and then coated in a flavorful Schezwan sauce, which is made from red chilies, garlic, and other aromatic spices. Ingredients:
For the chicken filling:
- Boneless chicken (finely minced or ground)
- Onions, finely chopped
- Spring onions, chopped

- Cumin powder

Instructions:
- Prepare the dough: In a mixing bowl, combine the flour and salt. Gradually add water and knead to form a smooth, soft dough. Cover and set it aside for about 30 minutes.
- Prepare the chicken filling: In a bowl, mix the minced chicken with finely chopped onions, spring onions, garlic, ginger, green chilies (if using), soy sauce, black pepper, cumin powder, coriander powder, and salt. Stir everything well until the mixture is evenly combined.
- Shape the momos: Divide the dough into small balls and roll them into thin circles. Place a spoonful of the chicken filling in the center of each circle. Pinch the edges together to form pleated dumplings.
- Steam or pan-fry the momos: Steam the momos for about 10-12 minutes or pan-fry them until the bottoms are golden and crispy. If pan-frying, add a little water to steam the momos after frying the base.
- Prepare the Schezwan sauce: Heat oil in a pan and add the Schezwan sauce, soy sauce, tomato ketchup, vinegar, sugar, and red chili powder. Stir well and cook for 1-2 minutes. Add sesame oil if desired for extra flavor. Adjust the consistency with a little water if needed.
- Coat the momos: Once the momos are cooked, toss them gently in the prepared Schezwan sauce until they are evenly coated.
- Serve: Garnish with fresh coriander leaves and sesame seeds if desired. Serve hot with additional Schezwan sauce or a dipping sauce of your choice.
