The momos are either steamed or pan-fried and then tossed in a tangy, spicy, and slightly sweet Schezwan sauce, giving them a bold, zesty kick. Ingredients:

For the momo filling:

  • Cabbage, finely chopped
  • Carrots, grated
  • Onions, finely chopped
  • Bell peppers, finely chopped
  • Spring onions (optional)
  • Green peas (optional)
  • Green chilies, finely chopped (optional for heat)
  • Ginger, finely chopped or grated
  • Soy sauce
  • Black pepper
  • Cumin powder
  • Salt to taste
  • Oil (for sautéing)

For the momo dough:

  • All-purpose flour (maida)
  • A pinch of salt
  • Water, as needed to make the dough
  • Oil (optional)

For the Schezwan sauce:

  • Schezwan sauce (store-bought or homemade)
  • Soy sauce
  • Tomato ketchup
  • Vinegar
  • Sugar (optional, to balance the spice)
  • Red chili powder (optional for extra heat)

Instructions:

  1. Prepare the dough: In a mixing bowl, combine the flour and salt. Gradually add water and knead to form a smooth, soft dough. Cover and set it aside for about 30 minutes.
  2. Prepare the filling: Heat oil in a pan and sauté the ginger, onions, and green chilies (if using). Add the finely chopped cabbage, carrots, bell peppers, and peas (if using). Cook until the vegetables soften slightly. Stir in soy sauce, cumin powder, black pepper, and salt. Remove from heat and let the mixture cool.
  3. Shape the momos: Divide the dough into small balls and roll them out into thin circles. Place a spoonful of the vegetable filling in the center of each circle. Pinch the edges together to form pleated dumplings.
  4. Steam or pan-fry the momos: Steam the momos for 10-12 minutes or pan-fry them until the bottoms are golden and crispy. If pan-frying, add a little water to steam them after frying the base.
  5. Prepare the Schezwan sauce: Heat oil in a pan, add the Schezwan sauce, soy sauce, ketchup, vinegar, and sugar. Stir well and cook for a minute or two. If you like extra heat, you can add some red chili powder. Adjust the consistency with water if needed.
  6. Coat the momos: Once the momos are cooked, toss them gently in the prepared Schezwan sauce until they are evenly coated.
